Prepare the Crust

  • Preheat your oven to 375°F (190°C) and grease a 9-inch pie dish.
  • In a mixing bowl, combine all-purpose flour, cold unsalted butter (cut into small cubes),granulated sugar, and a pinch of salt.
  • Using your fingertips or a pastry cutter, mix the ingredients together until they resemble coarse crumbs.
  • Gradually add ice-cold water, one tablespoon at a time, and mix until the dough comes together.
  • Form the dough into a ball, flatten it into a disk, wrap it in plastic wrap, and refrigerate for 30 minutes.
  • Once chilled, roll out the dough on a floured surface to fit the pie dish, then carefully transfer it to the greased dish. Trim any excess dough from the edges and crimp as desired.

Prepare the Plum Filling

  • Wash and pit ripe plums, then slice them thinly.
  • In a mixing bowl, toss the sliced plums with granulated sugar, all-purpose flour, ground cinnamon, and a pinch of salt until well coated.
  • Spread the plum mixture evenly over the prepared crust.

Bake the Pie

  • Place the pie dish in the preheated oven and bake for 40-45 minutes, or until the crust is golden brown and the filling is bubbling.
  • If the edges of the crust start to brown too quickly, cover them with aluminum foil to prevent burning.

Cool and Serve

  • Once baked, remove the pie from the oven and let it cool in the pie dish for at least 15-20 minutes.
  • Serve the plum pie warm or at room temperature, optionally dusted with powdered sugar or served with a scoop of vanilla ice cream.

Enjoy!

  • Slice and enjoy this delicious homemade plum pie with your favorite hot beverage or as a delightful dessert after a comforting meal!

Recipe notes

  • If plums are not in season, you can use frozen plums or substitute with other stone fruits like peaches or cherries.
  • Feel free to adjust the amount of sugar in the filling according to the sweetness of the plums and your personal preference.
  • For added flavor, you can sprinkle chopped almonds or almond meal over the plum filling before baking.
  • Serve the pie warm for a comforting treat, or chill it in the refrigerator and serve cold on hot summer days.
  • Store any leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat before serving if desired.
