- Flavor the Chicken
- In a small bowl, combine olive oil, dried thyme, paprika, garlic powder, and onion powder. (Alternatively, use a pre-made poultry seasoning blend.)
- Brush the entire chicken generously with the prepared herb mixture, making sure to coat the skin evenly.
- Roast the Chicken
- Place the chicken breast-side up in a roasting pan. You can add chopped vegetables (potatoes, carrots, onions) around the chicken for a complete roasted meal (optional).
- Roast the chicken for about 1.5 hours, or until the internal temperature reaches 165°F (74°C) in the thickest part of the thigh.
- For extra crispy skin, baste the chicken with pan drippings every 20-30 minutes during the last half of roasting.
- Rest and Enjoy!
- Once cooked, remove the chicken from the oven and let it rest for at least 15 minutes before carving. This allows the juices to redistribute for a more flavorful and tender chicken.
- Carve the chicken and serve hot with your favorite sides.
Recipe notes
- Roasting times may vary depending on the size of your chicken. Use a meat thermometer to ensure safe internal temperature.
- For a more flavorful roasted chicken, you can marinate it in the herb mixture for a few hours before roasting.
- Leftover roasted chicken can be used in various dishes like salads, sandwiches, or chicken pot pie.
